Best. Sweetener. Ever.
Iâ€™m sure you know that refined sugar has a hugely negative effect on the body, and is packed with empty calories. Thatâ€™s why Iâ€™m always on the lookout for more wholesome, natural sweeteners to use in my recipes so that we can enjoy a sweet treat without sacrificing our health or our figure.
Our ideal sweetener would have very low calories, add sweetness without an aftertaste and would be low on the glycemic index, making little to no impact on our blood sugar.
A few months ago I thought that Iâ€™d hit the jackpot with Chicory Root sugar. On paper it was the perfect, zero impact sweetener. I ordered a bag and quickly made a batch of uber-healthy brownies. Thatâ€™s the only batch of brownies that my kids have refused to eatâ€”there was no escaping the weird aftertaste in each bite.
So I went back to using raw honey and pure maple syrup in my recipes. While these sweeteners are ten times healthier than refined sugar, they still carry the downside of being calorie dense and being higher on the glycemic index.
But I never stopped looking for that perfect, natural sweetener. And it paid off.
I made an exciting new discovery this weekend called Yacon Syrup. Very much like Chicory root, on paper it sounds amazing. Here are the highlights:
- Yacon root syrup has little influence on the glucose tolerance curve and is dramatically less glycemic than honey, agave, or maple syrup.
- Though packed with sweetness, the sugar in Yacon is mainly fructooligosaccharide, which cannot be absorbed by the body. This means Yacon is both naturally low-calorie and low in mono and disaccharides (less than 1 gram per serving of the sugars that rapidly elevate blood sugar levels).
- Yacon Syrup is an excellent way to add sweetness to your diet without the negative effects of cane sugar or high fructose corn syrup.
- It is probably the only truly raw, organic, natural, low calorie, and low glycemic sweetener available.
That all sounds amazing, but how does it taste?
The best taste testers that I know are my 7 and 5 year old. Thereâ€™s simply zero sugar coating (pun intended J) when it comes to their reactions. So I ordered a bottle of Yacon Syrup and used it to make coconut popsicles and dairy-free flan.
It passed the kid test with flying colors! They gobbled up the desserts and asked for more.
The Yacon Syrup added sweetness and a caramel-like flavor to the desserts without aftertaste or any hint that it was extra healthy. Iâ€™m excited about all the recipe possibilities that have just opened up â€“ expect to see Yacon Syrup in upcoming recipes.
